Healthy Cravings: Easy Vegan Avocado Fudge

Self-care is crucial, and sometimes that means a bit of indulgence. Get your quick chocolate fix with this easy-to-make vegan avocado fudge recipe.

Avocados are fondly referred to as nature’s butter. This gives them a certain versatility, making them suitable for a slew of different recipes: tacos, smoothies, guacamole and now, fudge. This recipe is so rich with cocoa that one bite will satisfy those intense, midterm-induced chocolate cravings. With a smooth yet dense texture that melts on the tongue, it’s sure to be your new go-to.

INGREDIENTS

  • 1 tsp. coconut oil

  • 1½ cup vegan chocolate chips

  • ⅔ cup coconut cream

  • ¾ cup of unsweetened cocoa

  • ¾ cup sugar

  • 2 tsp. vanilla

  • 3 avocados, cut

  • Handful of your favorite nuts, chopped (optional)

  • Fresh rosemary, minced

  • Coarse sea salt

DIRECTIONS

  1. Coat square pan in coconut oil so fudge does not stick.

  2. In a medium pot, add chocolate chips, coconut cream, cocoa, sugar and vanilla.

  3. Melt ingredients and stir frequently to prevent the mixture from burning.

  4. Blend 3 avocados until smooth, using a blender or food processor for optimal results.

  5. Add the melted chocolate mixture.

  6. Add nuts. Optional: Lightly sprinkle rosemary and sea salt on top of fudge.

  7. Store in freezer and let cool for 3 hours.

  8. Cut off a piece in between study sessions!
